Stuffed Mushrooms


Ingredients:

2 small pkg. cream cheese
1 egg
1/2 onion minced (optional)
Lea & Perrins sauce to taste
salt and pepper
Parmesan cheese

Procedure:

Combine all ingredients and stuff fresh, washed mushroom caps and bake at 300 degrees F for 10 minutes or until melted. This is a tasty way for the kids to eat their veggies.

zucchini bake


Zucchini Bake


Ingredients:

1 can white or yellow corn
2 zucchini, sliced thin
1 whole tomato, cut up
slices of Monterey jack cheese

Procedure:

Drain can of corn. Combine corn with sliced zucchini and cut up tomato in 1-1/2 quart casserole dish. Salt to taste. Cover and bake at 350 degrees F for 45 minutes. Remove from oven. Top with slices of Monterey jack cheese. Return to oven for 15 minutes. Serve.

Maloukhia (Saluyot)


* This is a middle eastern recipe

Ingredients:

6 pieces of lamb shoulder or leg of lamb, cut approx. 2 inches with bone or without bone. With bone seems to taste better pieces of chicken can be substituted for lamb
3 cups of dried Maloukhia, or 2 packages of frozen
3 ripe tomatoes
10 cloves of garlic
4 tbsp of olive oil
salt and pepper to taste

Procedure:

Clean the meat you have selected and cover with boiling water in a 4 quart pot. Cover and allow to reach boiling, uncover. Skim the top of the broth until the broth is clear. Add the Maloukhia and increase the heat until the broth boils again. Reduce the heat upon boiling and allow to simmer. While the Maloukhia is cooking, finely chop 3 ripe tomatoes, peel and crush 10 cloves of garlic. When lamb is tender, add tomatoes, let simmer with Maloukhia. Saute garlic in olive oil until golden, pour on top of the Maloukhia. Add salt and pepper to taste. Allow to simmer 5 minutes. Remove the Maloukhia from the heat and serve with steamed rice or Arabic bread. You may squeeze lemon if you wish.
